For a really scrumptious and easy spread, my son and I have loved making cashew butter. My son finds it lots of fun blending the cashews until a butter forms!
To make, simply put any amount of roasted cashews (we buy the plain cashews (without added oil) and dry roast them in our oven) in a food processor or blender and process until smooth, scraping down the sides if necessary. We sometimes add a bit of macadamia oil to bring it all together.
Delicious wholefood spread (and much cheaper then buying quality cashew butter in the shops!)
AND- it was super delicious today combined with tamari, freshly grated ginger, fish sauce and a small teaspoon of rice malt syrup as a yummy stir fry sauce!
