I ran out of 100% peanut butter today and as I do not keep other spreads, I needed something quickly for my son’s lunch. Luckily I always have the ingredients for Hummus on hand! Here is the easy recipe I use:

In a stick blender combine:
Рa can of drained chickpeas (or use your own  soaked and cooked chickpeas (I keep mine in the freezer)

-a dollop of Tahini paste (I always have this in the fridge)

-zest of half a lemon

-Lemon juice to taste (I use the whole lemon)

-pinch of paprika

-Garlic clove

-1/2 a cup of olive oil

-Salt and pepper to taste.


Whiz together!
