I have been a little unwell this week so I wanted to whip up a quick, easy and nourishing meal for the family. I did not have much in the fridge as I had not been shopping. I did however have some chicken stock (always in my freezer), carrots, corn, and frozen peas.
I also had my garden available to me, which I am just loving. It has saved me going to the fruit and vege shop on many occasions because its bulked out my supplies. Its also very yummy.
This is what happened: Chicken Soup!
Here is what I used:
-1 onion diced
-2 cloves of garlic chopped finely
-1 carrot sliced
-1 cob of corn with kernels cut off
-1/2 cup of frozen peas
-2 leaves of silverbeet
-6 sprigs of thyme
-Handful of parsley (chop stems and leaves and keep separate)
-2 bunches of soba noodles (look for 100% buckwheat ones)
-200-300 grams of chicken meat chopped (I used leg meat cut off bone)
-4 cups of homemade chicken stock (or enough to cover)
Method
-Brown onion, garlic, thyme, and parsley stems (I used the chicken fat from the stock to brown them in). Add carrot and fry for 1-2 minutes
-Add stock, corn, peas and silverbeet and bring to the boil
-Add chicken and allow to simmer until cooked (I had mine on stove for about half an hour)
-about five minutes before serving, break the soba noodles into the soup.
-Sprinkle parsley leaves to serve.
